Glycogen is a polysaccharide of glucose that functions as the primary
short-term energy storage in animal cells. Glycogen is similar in
structure to starch, but glycogen has far more branches. Why? The model
below shows how every branch of glycogen and starch are "attacked" by
special enzymes (e.g. glycogen phosphorylase) that cut the end glucose
molecule from the branch. In which would more glucose be released in the
same amount of time? Plants cannot jump and don't need the rapid release
of glucose for energy as do animals.
