<b>All fatty acids have a long tail of carbon and hydrogen, which are
equally electronegative</b> meaning that they share electrons very
evenly. Evenly shared electrons make the tail non-polar. <b>[<a href="chemlink_polarity.html"><font>ChemLink:
Polarity</font></a>]. You may recall that oxygen is electron-greedy, and
pulls electrons away from carbon and hydrogen</b>. Notice the oxygen at
one end, the "head". Oxgen pulls some electrons (negative charge) to the
head, leaving a slighly positive region next to it. So the head is polar.
</p>
